Had a customer recently come to me with a Birds Beak paring knife, saying she could find nobody that could accurately or properly sharpen this style of blade correctly.
I haven’t tried yet, and wanted to ask the experts ( Clay and any others qualified to answer ) if the WEPS PP 2 system can do this kind of blade ?
I know Clay wrote somewhere you can use the stock stones on them.
I’d do like any other knife… mark it with a Sharpie, set the angle, and make a light pass with a fine stone… see where you’re hitting. It should follow the curve… just let the stone rotate around the arm… so you don’t grind the tip off. You may have to work it in both directions.
Most have a pretty large radius to the inside curvature so it should be no problem with the stock stones to do that edge.
+1 as Curtis advises on the method. Sharpie is going to show you what you are hitting (or more importantly not hitting) so you can tell if the flat stones will work, and where you need to position the knife to make it work.
