It is not my habit to publish links to my blog Japanese knife reviews, but in the past few days I tested a knife I did not want to deprive you off: a Johan van Zanten chef’s knife. It’s special in a number of respects: a geometry I have never seen before, an extreme thinness just above the edge, and the same applies to the tip. And it cuts like a dream.
