    Greetings,
    Purchased my WE system over a month ago. Thanks to all the information on the forum and the web it was easy to get the right system together for my needs. Hats off to Clay and his team for an excellently designed system that works as advertised!!! As an engineer, can also appreciate the design and the quality.

    My wife and I are foodies and I like a sharp kitchen knife. I also do demos for my local BGE dealer and I decided to start collecting Shun cutlery for use at these demos. (Wife said I couldn’t take her Cutco’s) So that being said, I started to investigate how you sharpen these fine Shun knifes and I stumbled on Clay’s Youtube video’s and the rest is history..
    I did want to share one thing I modified on my ceramic stones shortly after I started using the system. As they were breaking in, I found the white stone grabbing the knife edge and leaving marks. I put a slight bevel with an older diamond stone on both edges of the long edge of the stones and it seemed to help greatly.(Much like you do with larger water stones after flattening)Look forward to more sharing as I gain experience.

    Man, your wife’s decision on not letting you use the cutco’s had to be a good thing in the long run! The shuns are truly amazing compared to typical western knives (like cutco). Even though the shuns are more of a basic/entry level japanese knife, the blade geometry us spot on and you should be able to out cut/out slice her all day.

    Glad you have settled on one of the best hand sharpening systems on the planet!

    I echo Josh’s words.

    I got my system a year ago. The knives I thought were sharp then were pretty darned sharp.

    But a year later getting my practice in and my education from particularly this forum (a couple others, too) my edges are closer to (not quite there yet) wicked.

    In virtually every forum I visit about sharpening, almost all agree with Josh, too. Lots of good ones. Best there is.

    Hey Ken! Welcome to the forum! Enjoy your WEPS. Lots of engineers here (including myself) and some of us like to tweak almost every aspect of the WEPS. But as you say, it’s a great design with great quality.
