    ok I’ll start. Years ago I got two 7″ fillet knives, rubber handles, nothing special about them. On the blade said 440 Stainless (exact type of 440 not known). Geez those knives have served me for about 15 years now and still going great. I don’t use them a lot but hold a good edge and from memory were the princely sum of $29.95 each, I actually baulked a little at the price at the time as i thought they wouldn’t last long haha. Great knives, i’d buy two more if I could find them again!

    for me they would be called Lasting Cuts……on sale now at Restaurant Depot……..i use them in my restaurant rental knives…..made in china….all under 15 bucks and now on sale for under 10 each…….by far the sharpest knives i have ever had any dealings with.

    if you know the PT50B edge tester……all reading under 200 out of the wrapper……that is SHARP.
