I have a shun knife. It is full flat ground as most kitchen knives are. After I clamp the knife in the vise should I use my angle cube and set 0 off the blade or the vise?

    Thank you

    Hi Sean B,

Welcome to the forum! Which Wicked Edge sharpener are you using? If you have one with the generation 3 self-centering clamp, you should be in good shape and will not need to do any corrections after setting the angles symmetrically. However, if you have one of the models that uses the older clamp with the set screws you may need to add a small correction to one side of the blade to account for the the way that the knife sits in the clamp if you want to have perfectly matching bevel angles. With a thin knife the correction will be very small and it will not significantly affect performance to simply ignore the correction and set the angles the same on both sides.
